Blending & Maturing
Individual blocks are processed and matured separately and only blended once ready for bottling. The logic is that only the best blocks in each harvest are blended together to form the final product, whether they are from a single cultivar or a blend of cultivars.
Barrel maturation is expected to last 18 to 24 months after which the wine will be allowed to lay in bottle for a further 6 to 12 months in order to reach a higher level of maturity prior to sale.
